Autumn is the season for truffles (Trueffeln, truffes, tartufi) and game (Wild, chasse, cacciagione) - and Auberge d’Hermance is just one of myriad restaurants around the country offering both. Open 7/7, they’ve got truffles in salads, risotto, pasta and a pigeon dish. Their game specials are:
Terrine of roe deer served with onion jam and Corinth raisins
Roast saddle of roe deer with Grand Veneur sauce and classical accompaniments (these can include red cabbage, Brussels sprouts, a cranberry-style sauce, spätzle, etc)
Pan-fried noisette of stag with autumn fruits and vegetables, Forestière-style
Stew of baby wild boar braised the traditional way, with kohlrabi and spätzle
