Citrus delights in Geneva

February 19 and 21, 2009. Imagine a six-course meal, each course featuring different citrus fruits: grapefruit, kumquat and lime, blood orange, combava, lemon, and clementine. From amuse-bouche (pre-starter) through “pre-dessert” and real dessert, the fruit highlights such dishes as veal with pistachio and kumquat-powdered rice served with flat-grilled foie gras of duck and lime, and  lamb with pop-corn  polenta, cardoons, and quince with combava peel. This Délices d’agrumes repast can be savored at Le Grand Quai, the main dining room of the Swissôtel Métropole (www.swissotel.com/geneva), which was recently redecorated to give it a more contemporary feel.  The meal costs 98 francs a person without beverages, or 125 francs a person including wine, mineral water and coffee.
